Jules.
Weigh your 3 eggs in their shells, & then use the same weight for the fat, flour & sugar!

Valkyrie
Jules - that is a good tip with regard to weighing the eggs. I was wondering the other day - I made brownies but the eggs that I bought (marked as "Large") looked a lot smaller than usual, so I added an extra one for good measure. If anybody wants the recipe for the brownies, I'll gladly pop it on here if there isn't one already.
chickencam
I have just made a fairy cake version and very nice they are too Quality control you understand quality control The egg weighing method again. I wanted slightly more mixture so i weighed 4 eggs and did equal quantities of the other ingredients it makes sponge making so much more flexible
Mrs Frugal
I make lemon drizzle cupcakes for the boys lunch boxes. Very popular!! I don't use icing sugar for my topping but do what Mum always used to do. I mix the juice of 1 lemon with 4oz granulated sugar for a lovely crunchy topping. Spoon it over the hot cake or cupcakes and then cool. Divine!!
Snowy
Thanks Jules! I do feel abit thick with this cooking lark still... Don't feel thick Lisa - I've found cooking is a life long learning experience! Until I discovered the joys of the Omlet forum, I couldn't cook anything without a recipe book. Now I can throw cakes together in seconds! My husband can forgive my Omlet addiction, as long as the cooking continues to improve

chickencam
HFW has a great brownie recipe in his Family cookbook, it does have nuts in but you could leave them out. IMO nuts are essential in a brownie to cut through the richness. There is also a great chocolate chunk cookie recipe in the same book. LJ's Chooks
Oooh HFW cookbook, now on my list of yummy things. I don't do nuts, but a local coffee shop uses banana instead and that is gorgeous... but they wont give me the recipe!! rats!!!! Claret - you've just cost me 3 pounds... weight and money! Made a lemon drizzle cake for my youngest sons school fair... i didn't have enough ingredients for two, so i had to get up early and go and buy it back before someone else did... is that mad or what.... my hubby has eaten most of it as his midnight treat!!! love him
