Lavender Shortbread

As requested by Janty - I made these for the Crafty Weekend.....

 

Lavender Shortbread

 

Pre heat oven to 180C

 

2oz caster sugar

4oz soft butter

8oz plain white flour

Lavender flowers - dried and clean (not dusty ones from a vase!)

Extra sugar for dredging

 

Cream the butter and sugar until light and fluffy, add a handful of lavender flowers and then mix in the flour until you have a soft pliable dough.

 

Roll out to a quarter of an inch thickness and use a small round cutter. Place on a non stick baking sheet or silicone paper on a baking sheet. Bake for approx. 17 mins - the biscuits need to be pale but cooked.

 

While the biscuits are baking whizz another handful of lavender flowers with caster or granulated sugar in a foof processor until you have a purple speckled sugar. Use this to heavily dust the top of each biscuit as they come out of the oven.

 

Cool on a wire rack.

You can but they won't be dry, it would still work though.

 

I usually stand ones I want for cooking in a vase without water, cover them with some muslin and leave them for a week, then I rub all the flowers off into a paper bag to store them. I make lavender sugar in bulk and store that in jars and keep it in a cupboard.

Well........I always say "a bit of dirt never hurt" :D - so if it was dusty before you bought it I'm sure it won't kill anyone :wink: You could rinse it and place it on kitchen paper to dry?

 

I make a big batch of lavender sugar and keep it in a jar,

 

(I think I've said that before! :oops: )

Oooo...I've got a big jar of Lavender sugar...perhaps I should use that :idea:

 

I make some later in the week and report back :D
