sunshinesupernova
I made a cracking cake over the weekend The mix would also make lovely cupcakes rather than one large cake.

Saronne
I made some blueberry ones last night using frozen berries - yep, they do 'bleed' into end result, but they are scrummy! Note: I did add some vanilla extract and a pinch of salt to give a more rounded flavour... Saronne x

bluekarin
In the oven are 15 chocolate chips and banana muffins (50g chopped dark chocolate and two mushed nanas). This time, I've added a pinch of salt and some vanilla extract so I shall see how these turn out. They look very yummy, even in their liquid state I did a bit of a booboo though as I put in some bicarb instead of baking powder I added some cream of tartar to make it into baking powder - it just may be a bit too much EDIT: well, they rose, but only to the top of the muffin case and have a flat top. But they taste yummy, so I think the salt and the vanilla really helped. Very light and fluffy despite my best efforts Edited March 1, 2010 by Guest

Guest
being nosey - where did you get chocolate coated toffee balls - or is that poppets ? they were from a Fiddes Payne 'chocaholics delight' tub that I got in Aldi the chocolale flakes were from the same tub, this is the one http://www.fiddespayneshop.co.uk/chocoholics-delight-33-p.asp it has 4 sections, one with white choc chips, one with choc flakes, one with the choc/toffee balls and one with chocolate vermicelli. I bet you could use poppets though!

bluekarin
Do your choc chunks sink to the bottom of the muffins when you make them? If not how do you stop it happening? Mine always sink to the bottom, and as nice as it is, it would be nicer to have it spread a bit more evenly through the muffin.
Guest
mine don't sink. i get a normal bar of choccie and bash it with a rolling pin and they seem to be quite evenly spread. Is your batter perhaps too runny? I use plain yoghurt instead of milk, maybe that helps (thicker batter?)
bluekarin
Thanks! I shall try yoghurt next time I make some. I chop up a bar of chocolate (drops are far too expensive I feel, although I'd love to have a great big bag of drops ), so some pieces are big and some are flakes. Guest
.... so some pieces are big and some are flakes. same with my bashing, I think the yoghurt might help
fluffyknickers
I make quite a lot of muffins and last night made some banana and choc chip ones as had some horrible black bananas to use up. I freeze them and get one out for sons lunch box in the morning and nice and defrosted come lunch time. I use any choc I can get my hands on (currently using callebaut as my friend gets it for me in huge bags) and dont have problems with sinking choc. I use veg oil, milk, eggs, flour, sugar...but you could use marg or butter and water. They are so easy and VERY quick. Michelle
