the only muffin recipe you will ever need!!!!

I make quite a lot of muffins and last night made some banana and choc chip ones ....

 

i am eating a banana and choc chip one as i type this! :lol:

Thanks! I shall try yoghurt next time I make some. I chop up a bar of chocolate (drops are far too expensive I feel, although I'd love to have a great big bag of drops :D ), so some pieces are big and some are flakes.

 

Yes, the drops are amazingly expensive. I discovered today that it is possible to make your own if you happen to have time on your hands!!! I was making some cake decorations out of piped melted white chocolate and had quite a bit left over, so I put tiny blobs on some baking parchment and popped the sheet into the freezer...result: white choc chips!

 

Loving the muffin recipe BTW, eating a blueberry one as I type... :drool:

ahhh, but that would take quite a while for me to make a decent amount of choc drops :lol: But I have thought about. I think I'd rather bite the bullet and buy some ready made.

I'm kicking myself now - just made a wacky cake and some choc chip and cranberry muffins. But I've just realised I also have a bunch of blackening bananas that need using. Choc chip and banana sounds much nicer than choc chip and cranberry. Oh well, will just have to make some more tomorrow :roll::lol:

I had a sweet craving so whipped up a batch with what i could find the fridge/cupboard :whistle:

 

just made some raspberry and vanilla ones with milk instead of yoghurt, vanilla essence and a blob of raspberry jam in the middle.

 

A lot lighter than the yoghurt ones (I prefer the heavier texture of the yoghurt ones) but still very nice!

 

Just put some batter in the muffin case, about 1/2 tsp jam then more batter on top and cook as normal.

I made a rather serious raspberry type cupcake yesterday. There is still a couple in the fridge so I can do belated pictures tonight and blog it.

 

I used Primrose Bakery recipe for a raspberry cake, then topped it with a good spoonful of a white chocolate cheesecake mix (recipe devised from a Hummingbird recipe) and baked. Finished that lot off with a raspberry cream cheese icing.

 

The'y been pretty much demolished at work. My 17 month old managed a whole one too - he couldnt get enough of the icing !

I made some banana and chocolate chip which were lovely on their own. But then I decided to have a go at making a cream cheese frosting which I've never done before so chucked that on top. Oh my word :drool::drool::drool: How come I haven't discovered this before now?? :shock:

I often think of Poet & her recipes, specially if I'm opening a tin of ' Connie Onnie' (condensed milk) for making something. Taken from us far too young & I always wonder how her hubby is coping. Anyone know?

Thanks for bringing this recipe up again. It's the perfect thing for me to make for my neighbour who is doing some work for us.
