BeckyBoo Posted March 30, 2010 Share Posted March 30, 2010 OK, so I do quite a lot of pickling and jam making, baking, home cooking etc, but I was wondering how I would go about making a diabetic friendly jam or pickle? I know that sugar is "the enemy" so how would you get a set, even a soft one, without adding the pounds of sugar normally needed? ClaireG Posted March 31, 2010 Share Posted March 31, 2010 I am diabetic and use normal jams and pickles, chutneys etc. as advised by my doctor and dietician. I just eat less of them and eat them as part of a balanced diet. Baking wise i tend to find most recipes will work just as well with less sugar. I occasionally use a sweetner instead of sugar.
