Charlottechicken Posted September 22, 2011 Share Posted September 22, 2011 Help! I've found an almost full jar of peanut butter in the back of the cupboard, and it has to go. I buy a jar every few years, thinking I will eat it, but never do. I know at least one of you creative Omleteers will have a tried and tested recipe that requires peanut butter, hopefully a whole jar, or maybe I can make a few things with it! Mrs Webmuppet Posted September 26, 2011 Share Posted September 26, 2011 I have just the recipe you need ( highly recommended by my colleagues): Snickers and Peanut butter Muffins ( from Nigella's How to be a Domestic Godess) 250g plain flour 85g golden caster sugar 1.5 tablespoons baking powder pinch salt 160g peanut butter 60g unsalted butter 1 large egg beaten 175ml milk 3 x65g Snickers bars (or Supermarkets own) chopped 12 bun muffin tim lined with cases preheat oven to 200oc. Stir together flour, sugar, baking powder and salt, add peanut butter and mix. add liquid ingredients add chopped Snickers bars. Mix. Dollop into cases. Cook for 20-25 mins, until risen, golden and firm to touch. Allow to cool in tin on a wire rack for 10-15 mins before removing from tin........try to allow to cool before eating. bluekarin Posted October 4, 2011 Share Posted October 4, 2011 If you prefer something to eat in little nibbles then how about this Peanut butter fudge 125g butter 500g dark brown sugar 120ml milk 250g peanut butter - says crunchy but I am sure smooth would be just as good 1 vanilla pod - seeds only 300g icing sugar Melt butter in pan over medium heat Stir in brown sugar and milk, bring to the boil for 2-3 mins without stirring Remove from hear, stir in peanut butter and vanilla seeds Put icing sugar in large bowl, pour on hot butter/sugar mixture Stir with a wooden spoon and beat until smooth Pour into a 20cm square baking tray (I think I lined mine with parchment first) Set aside to chill in the fridge Cut into squares and store in an airtight container (I stored mine in food bags, tied, in the fridge) Quote Link to comment Share on other sites More sharing options...
