Christmas lunch/dinner

We still haven't decided yet but it is usually plain as we are a bit limited diet ways on fat, sugar and alcohol intake.

 

We think it will be roast turkey and a roast chicken - carrots, parsnips, sprouts, roast potatoes and pigs in blankets. Probably Yorkshire puddings, because that is one thing I can actually do without measuring. No-one likes cranberries or bread sauce, sausage rolls or mince pies. We think pud will be home-made raspberry or mango cheesecake for pudding, something light and fruity. Boxing day is bubble and squeak, with apple pie or crumble and custard.

 

Hopefully no more than half an hour to an hour of activity all told on either day. I'd hate to spend it all in the kitchen.

Chestnut ice cream.Made the usual custard mix-300 ml whole milk,100gm sugar,3 egg yolks. let it cool overnight in fridge. whip up 300ml whipping cream until beaters leave faint trail when lifted from cream.Stir the cream into custard. I added about 1/4 tin of chestnut puree before putting it into ice cream maker. As the puree was rather solid I broke it up a bit with fork. I licked the spoon and it tasted great. I have never made this flavour before. I hope if any one makes it they will enjoy it.

We have finally agreed on our Christmas meal.

 

Roast Chicken, roast beef, Roast Potatoes, roast parsnips, carrots, brussel sprouts, yorkshire puds, cranberry sauce and gravy. I have requests for 3 types of stuffing, Chestnut, skirlie and sage and onion Paxo :roll:

 

Dessert will be raspberry pavlova and/or chocolate fudge cake with cream or vanilla ice cream.

 

I don't think we will need any food in the evening but if any one feels hungry there is plenty of quality street :D

We dispatched of our Christmas cockerel this evening :) I'm really looking forward to Christmas now! :dance:

My older brother and his family will be joining us and I'm looking forward to having some little kids around (his two year old boy and four year old daughter, who will be five on boxing day). My brother and I stopped being really, properly excited about Christmas a few years ago so it will be nice to have some Christmas glee about.

 

Accompanying the cockerel will be:

-black pudding stuffing

-roast potatoes and parsnips

-pigs in blankets

-veg (brocolli, green beans, carrots and sprouts :wink: )

-cranberry sauce

-gravy

Plus my sister-in-law is bringing along a homemade Christmas pudding and I'll be making a chocolate log (and possibly homemade raspberry sorbet- depending on how many raspberries are left in the freezer!) :D

Presents are already gathering around the fireplace :D:D:D

I will be working from 1-9 pm on Christmas Day :( but on Boxing Day going to my mum's - she is cooking turkey with the usual trimmings and then Christmas Pud (I am the philistine who will have cream :wink: ) then in the evening go to the boyfriends - no food but lots of champagne ! I cooked quail last year but as I now have some quail couldn't eat it anymore, they are so friendly - I even have 2 cocks in together who are great mates :)

We will behaving a special Sunday dinner, with a starter and pudding really, as there is only 4 of us on the day.

 

Homemade pate to start

 

Capon (Mr Meat - my grower, but he was/is rather small even for 4) and to pad out, a great piece of fillet beef.

Roast potatoes in duck fat

Parmesan parsnips

Carrot and swede mash

Broccoli

Cauliflower

Homemade stuffing (got some chestnuts)

Yorkshire pudding

Pigs in blankets

 

Eaton mess with raspberries

Or Christmas pud.

Have you the recipe for the black pudding stuffing, please? As I posted earlier, I'm doing either Guards of Honour or crown of lamb, and that stuffing sounds as if it would work really well.

 

It's not a recipe as such, we just make normal sage and onion stuffing, then skin and chop black pudding and mix it into the stuffing with a fork. I love it :D

Thank you for that; I'll see if I can pick up some decent black pudding and try it.

I'm going to my sister's for lunch on Christmas day, we are having turkey. There are 20 of us.

We will have prawn cocktail to start (or melon), Turkey with all the trimmings, dessert is Vienetta, or Christmas pud or raspberry roulade, mince pies. Lots of cheeses. Coffee and mints. Very traditional. I think if there were fewer people we would do something a bit different, but sticking to a safe tried and tested combination :D (and I love it all anyway!)

I've ordered a goose and we are going to cook it on Boxing day.
