Egluntyne
Found this on 'tinterweb and thought it intriguing enough for the Omleteers. ~Crazy Cake~ I shall be trying the chocolate peanut butter icing on mine!
Space Chick
That is rather strange.... Particularly the vinegar
Ain't Nobody Here
It does sound crazy . I think I will try it though .
Cat tails
Vinegar will react with the baking soda to make it rise. Normally eggs would do this trick. No eggs, no bake for me!
Lavenders_Blue
Vinegar and baking soda are quite a common way of raising vegan cakes - as Cat Tails says, normally eggs would do the job. I'll stash this recipe away for the winter egg famine. At the moment I've got more eggs than I know what to do with so am baking away like mad (what a hardship )
Cat tails
There is only one rule in baking: The taste is in the calories! No calories, no taste. Why sin on something that isn't really as good as the real deal...
mullethunter
Has anyone actually tried it yet?
Cat tails
I've make a similar cake like this actually. I think the closest thing I can compare it with is a sort of spicy sponge pudding... It's rather dense and sticky but really good. I make it with orange juice instead of vinegar and add things like cinnamon, cardemom and raisins. In Holland we have something we call "ontbijtkoek" or breakfast cake. It has the same consistency, sweet and sticky and very low in fat. Egluntyne
I'm going to be having a go at the version made with gluten free flour. Am always on the look out for a decent gf cake recipe as I am coeliac.
soapdragon
Egluntyne - I have just bought a book called Gluten Free Christmas (for a friend of mine who is a coeliac) from The Book People FOR £3.99 - looks lovely. Her b'day is 30th Nov so she has time to get baking

Valkyrie
Er, I've just bookmarked it - have a neighbour that is now on wheat and gluten free products. Wish it had been around for my dad! So as we are going to a Christmas get together and I'm doing desserts this could be just the thing!!! Thankies Eggers.
