I have the cookbook we received when we joined the Soil Association - The Boxing Clever Cookbook - it is based on the contents of veggie. boxes. There are no recipes using celeriac though! Egluntyne Posted October 15, 2007 Share Posted October 15, 2007 Braised in a cheese sauce. Yum. Him Indoors absolutely loves Celeriac and Potato mash. I'm quite partial myself. Mash your spuds in the usual way. Combine with Celeriac that has been simmered until tender and mashed until smooth. Season and add butter and milk to taste. It doesn't even require cooking (the only effort is in the grating). 250 ml creme fraiche juice of half a lemon 2 tbs grain mustard handful of walnut pieces. about 500g celeriac Peel and grate the celeriac (or shred finely), mix the other ingredients then mix all together. I made soup with a whole celeriac, some onions, carrots, garlic and seasoning- sautee the onion and garlic when soft add the cubed celeriac and sautee for a few more mins then add stock- chicken or veg- and carrots, when veg is tender, blitz it and season- really nice!
