little chickadee Posted October 28, 2007 Share Posted October 28, 2007 Hi - I'm a new chicken owner, so havn't had the joys of my first eggs yet, but am really looking forward to it. I love baking and wondered if anyone finds there is a difference (say for sponge cakes) in using really fresh eggs, or is it better to use ones a few days old? Just curious! I amazingly won the sponge cake competition at the village show (I'm only 33 - I thought you had to be a lot older than that!!!!) and would love to keep up my winning streak! Snowy Posted October 28, 2007 Share Posted October 28, 2007 I don't know! I just know they are much better with my home eggs than anything bought from a shop. I always use my oldest eggs first for baking but they are never more than a couple of days old, so maybe that should tell me that fresher is best (I will stand to be corrected by more experienced bakers though! ) Quote Link to comment Share on other sites More sharing options...
Charlottechicken Posted October 28, 2007 Share Posted October 28, 2007 I have used eggs up to three weeks old in a sponge and it still tastes divine, so I would say they do not have to be that fresh, but I am not an experienced baker . Olly Posted October 28, 2007 Share Posted October 28, 2007 If you're whisking the whites (for meringues) then older are definitely better - for some reason the fresh egg-whites don't whisk so well. Otherwise, I haven't noticed a difference; they are fresher than ones you'd buy in the shop anyway, and of course they taste so gorgeous. I've baked as normal since I got my own chickens, and not noticed anything except maybe a more fabulous colour 'cos the yolks are so yellow!
