Lemon Curd Recipe

Well, I had bought lemons ready to have a go at lemon curd today. Just realised I do not have any jars :roll: Empty jars were recycled on thursday :roll:

 

It doesn't last long Ali :wink: - you could put it into small glass bowls and keep it in the fridge? I only put three quartes of mine into sterilised jars - the other quarter is in a dish waiting to go into the Lemon Meringue Roulade tomorrow.

Quick pudding idea:

 

Lemon curd + equal quantity of whipping/double cream - whip up cream first then fold in the lemon curd.

 

You can then use this quick lemon mousse in various ways.

 

I've done it just with a digestive biccy base, with a sprinkling of biscuits on top.

 

The other week I had guests and I layered this mixture with soft shortbread biscuits and strawberries/raspberries - very yummy.

 

The basic mix is a great last minute pud, and so healthy.... :liar::wink:

Lemon curd + equal quantity of whipping/double cream - whip up cream first then fold in the lemon curd.

 

You can then use this quick lemon mousse in various ways.

 

I've done it just with a digestive biccy base, with a sprinkling of biscuits on top.

Try it with half mascarpone cheese and half cream - to die for as a type of mousse when run out of ideas. Very fattening though :shock:

I just made the lemon curd at the start of this topic from Kate's recipe (from Nigella originally!) - I made half quantities as there is just me here - it is absolutely divine.....this should be called lemon velvet curd or something as the texture is so lovely.

 

The colour is so beautiful and like no lemon curd I've ever bought, thanks to my lovely girls!!

 

I love this forum, as you get so many great ideas from it (and also lots of ways to spend money :roll: ) :wink:

I made lemon curd today for the first time :D It was so amazingly yummy!

Also made the lemon meringue roulade for dessert tonight, yum, yum, yum!

Thanks for the info, my boyfriend now thinks I'm a fabulous domestic goddess! :lol:

I really want to make this and don't have jars. I asked on Freecycle but only got offered jars a 50 minute drive away so I think I'll order some from Lakeland :)

 

Shirl - it only makes 2 jars and doesn't really have a long shelf life, you could just put it in small bowls or basins and keep it in the fridge? It doesn't last long once you've made it..... it's too yummy! :wink:

Give some to someone you can trust to give the bowl back! :lol:

 

Make a cake and use it as filling........... and then give some cake away!

 

Freeze it in plastic bags - keep it until you have some jars - and then tell us how it freezes? (sorry :lol: )

I made this in individual glasses for pudding this evening and it is DELISH!! Thanks Diane :D . I shall be making it again........and again.......and again!!

I've managed to keep unopened jars for 2-3 months in the fridge but it goes off quickly once the jar has been opened so I always use the smaller 1/2lb jars to store it in and put the lids on immediately after the hot curd has been poured in to prevent condensation.

I only have some salted butter - do you think it will be ok?

I suppose I could leave it until tomorrow :(

 

I always use salted butter - it's all I ever have in and it tastes delicious! As for how long it lasts, I reckon 2-3 weeks in teh fridge once opened.
