I only put three quartes of mine into sterilised jars - the other quarter is in a dish waiting to go into the Lemon Meringue Roulade tomorrow. You can then use this quick lemon mousse in various ways. I've done it just with a digestive biccy base, with a sprinkling of biscuits on top. The other week I had guests and I layered this mixture with soft shortbread biscuits and strawberries/raspberries - very yummy. The basic mix is a great last minute pud, and so healthy.... Omletina Kyckling Posted April 7, 2008 Share Posted April 7, 2008 I just made the lemon curd at the start of this topic from Kate's recipe (from Nigella originally!) - I made half quantities as there is just me here - it is absolutely divine.....this should be called lemon velvet curd or something as the texture is so lovely. The colour is so beautiful and like no lemon curd I've ever bought, thanks to my lovely girls!! Mrs Frugal Posted May 27, 2008 Author Share Posted May 27, 2008 I've managed to keep unopened jars for 2-3 months in the fridge but it goes off quickly once the jar has been opened so I always use the smaller 1/2lb jars to store it in and put the lids on immediately after the hot curd has been poured in to prevent condensation.
