chickencam Posted April 24, 2008 Share Posted April 24, 2008 Has anyone any good family store cupboard meals for when the fridge is dwindling at the end of the week and there is no time or inclination for shopping? My favourite apart from eggs, is my MIL's recipe for corned beef hash which bears no relation to most recipes with the same name, it is basically a corned beef cottage pie. 1 large tin, and sometimes a small one too is we are feeling greedy of corned beef cut into chunks. 1 large onion chopped carrots to taste sliced enough mash to cover your chosen dish Just make the mash, then chop up the beef and put it into a dish with the chopped onion and carrot cover with the mash and cook until done - about 50 minutes depending on the oven. It is very tasty and can be prepared in advance, we usually serve it with frozen peas or cabbage depending what we have in Any other ideas would be greatly appreciated. One can corned beef One can baked beans Mashed potato Chop up and mash the corned beef into the base of an oven proof dish. Cover with baked beans and top with mashed potato. Bake for 30 mins at 200C/GM5 - delicious with grated cheese on top of the potato too. Grandma also used to do an Apricot Charlotte: One can apricot halves Caster sugar Fresh breadcrumbs Butter Fry the breadcrumbs in a little butter until lightly golden. Slice the apricots and layer them alternately with a sprinkle of caster sugar and a layer of breadcrumbs, apricots, sugar, breadcrumbs..... End with a layer of breadcrumbs and dot with some butter and a sprinkle of caster sugar. Bake at 200C for 30 mins. Quote Link to comment Share on other sites More sharing options...

BeckyBoo Posted April 28, 2008 Share Posted April 28, 2008 Sausage and bean pie: As many sausages as you would need to feed you all, fry them up with sliced onions, place carefully in an oven proof dish (or just chuck em in) add a tin of baked beans, put mash potato over the top, optional extra - grated cheese over the spud, bake til golden brown. Omletina Kyckling Posted May 16, 2008 Share Posted May 16, 2008 Tuna pasta dish is my suggestion when I don't know what to do - plus it feeds the menagerie. I open a tin of tuna, give some to the cats and then the rest is for me. Cook some wholemeal pasta, once it's done, tip in the tuna, some capers, dried herbs and grated strong cheese, mix it all together and hey presto!! More recently I have added sweetcorn and I always make double portions so that the chooks get half of it....they absolutely love it - the pasta goes first, then the sweetcorn, then the rest.
