I make fairy cakes with three different colour icings, all using fresh fruit - I think the idea was a Jamie O one...... I use a little mashed strawberry for one third.... Mashed raspberry for another third and mashed blueberry, with a little raspberry, for the last third. They look fantastic on a plate - lots of pink iced cakes..... and no colourings! I've got a cardboard, slot together, stand for small cakes ........ and I know you can get the one with wire rings that the cakes drop into....... Posted May 26, 2008 Share Posted May 26, 2008 I'm inspired to try and create a cupcake stand and make a cupcake display for Immi's birthday cake this year I have made quite a few cupcake spires using oasis from hobby craft covered in foil as the base and the cakes held on through the base by a piece of cocktail stick and tightly spiralling them round I did it with petit four (sp?) cases too and it took almost 120 cakes they are so small they disappear very quickly White icing and silver balls look very and white and pink alternating look funky too. To me, a fairy cake denotes something tiny, exquisite and magical. I will be hosting a local LETS meeting in July, so perhaps that's the time to try my own hand at making some. Tara.F Posted May 26, 2008 Share Posted May 26, 2008 I'm inspired to try and create a cupcake stand and make a cupcake display for Immi's birthday cake this year I make wedding towers like those A tip for you....buy three ordinary round cake boards, a big one a middle one and a little one. You will also need seven* champagne flutes (plastic ones are fine, esp if there will be kids about ) put four champagne flutes upside down on the biggest board about two inches in from the edge, then fill the board with cakes. Balance the middle board on top and place three champagne flutes again, fill with cakes and finally add the final tier and put your very prettiest cakes on the top. *if you have a tiny vase or an eighth flute, you can put some real rose buds in to make it extra special. Tie ribbons round the stem and let them cascade down all three tiers and if you really want to impress, sprinkle rose petals from above to adorn the tower and the table it's sitting on.
