Uses for frozen strawberries please!

My strawberry plants have gone into overdrive this year and are producing masses :D. I gave some to people at work who were very ungrateful :evil: and just complained they didn't keep well :shock: and have now frozen loads, as I'm not giving them any more!

 

I know you can't use them as "fresh" strawberries when defrosted, as they go all mushy, and I can use them for ice cream and smoothies, but I have no other ideas as to how to use them once they have been frozen. I know you canny forum folks will be full of good ideas, so would anyone be willing to share? I'm thinking strawberry omelettes are just not going to work ... :lol:

Sorry to sound like a spoiled brat, but I'm not very fond of strawberry jam - more of a chunky marmalade fan :roll: . Someone at work was saying they want a jam-maker though, so I may be able to do a trade :think:

 

Any ideas on how to make a thick strawberry sauce to pour over pancakes or swirl into ice cream? Any good alcoholic drinks you can use strawberries in? - oops, sounding like a lush now :lol:

What about a nice strawberry trifle? Doesn't matter if they are fresh, frozen or tinned to be delish in a trifle............or squish them up and splodge them on top of a pavlova..........or sorbet............or ice cream?

 

Poet's strawberry ratafia is divine :drool: . Might be OK with frozen strawbs?

 

For a simple strawberry sauce, just whizz up the strawberries in a liquidizer/blender with icing sugar.

A strawberry compote is a great idea - you stick loads of strawberries into a slow cooker, about 1 kg, with 100g sugar, 75 ml water and some spice, either vanilla, cinnamon or nutmeg and just cook on low for 5 hours and there's a beautifully rich strawberry sauce!

We make strawberry jam from frozen strawberries with great success, but to be fair I did add a few redcurrants too which probably upped the pectin level.

 

We use ours in smoothies and in cooked puddings mixed with rhubarb in the winter. Rhubarb and strawberry is a winning combo :D

Recipe for frozen strawberry margarita

 

175 ml tequila

60 ml triple sec

225 g frozen strawberries

145 g frozen limeade concentrate

1420 ml ice

 

Place ice in a blender and crush for 15 to 20 seconds.

Add frozen strawberries, tequila, triple sec, and limeade.

Blend until smooth.

 

I've not tried it....yet!

I use frozen raspberries to make an instant frozen yoghurt - I think it would work if the strawberries are small or sliced........

 

Put the frozen fruit in a food processorwith some caster sugar or honey - blitz to break up the fruit then add yoghurt and blitz again. The frozen fruit freezes the yoghurt.

 

Serve immediately.

 

I've also made jam with frozen strawberries - I put the same weight of Jam Sugar in the pan and put the frozen fruit on top - leave overnight. Don't add any more liquid and make as usual.

This is my Strawberry Sauce recipe.

 

500g frozen strawberries

75g caster sugar

a good shot of brandy

 

Over the hob for 10 to 15 mins on a low heat so just simmering, leave to cool.

 

Its yummy with Cheesecake, ice-cream, pancakes etc etc and keeps in the fridge for a few days :D

You might think strawberry omlets don't work, but they do!!!

I am on a wheat free diet at the moment and was running out of ideas for things for breakfast (it used to be 2 poached eggs with marmite on toast). I had eggs, a very ripe banana and some strawberries, so I made a sweet omlet (recepies on the internet). I have to say, I thought it was very yummy, but my family thought me quite mad.

The only downside with using frozen fruit, would be that it is quite watery, but it's worth a try.
