Lesley Posted March 18, 2010 Share Posted March 18, 2010 I made these for my son's ( 30+) birthday yesterday........... Wacky Cake (choc) Muffins with Peanut Butter and Cream Cheese frosting.... Triple Choc Muffins..... Curly Wurly Muffins with a Fudge topping...... He wanted to go to Pizzahut so my daughter booked - they asked if it was a birthday and she said "yes, but he's over 30" - which was written down as 13.....and so he had balloons all over the table - the cakes went down well with all the neighbouring tables as well - he had to cope with everyone staring. I used your recipe for the Triple Choc ones, the Wacky Cake mix for the peanut butter ones and the Curly Wurly ones were actually a cupcake recipe - which was just a 4oz sponge mix like fairy cakes, with chopped CWs in. (A related muffin question : when it says don't overmix, should you try to mix all the flour in or doesn't it matter if some flour is still dry?) How do you make your icing look like a rose lesley? I use a large star tube - start in the middle and pipe outwards - hold the bag vertically over the top of each cake. I think i'll definately be making some this weekend, we do a cake similar to wacky cake that everyone likes so should be on to a winner. Also love the sound of curly wurly muffins! Lesley Posted March 19, 2010 Author Share Posted March 19, 2010 I made vanilla butteream with some melted white chocolate added for the choc. muffins. The peanut butter frosting was 2 oz smooth PB and 1 oz cream cheese - add 8 oz icing and beat well - mix in another 1oz of cream cheese but do not beat. The fudge topping was poured on hot - I can find the recipe if you'd like that one as well? Edit - cross posted with Sunshine..... Melt 2oz Butter, 5oz soft brown sugar and 2 tbsp. whole milk - heat until the sugar is dissolved, then boil rapidly for 3-4 minutes. Remove from the heat and gradually stir in the icing sugar. Beat with a spoon until smooth. Use straightaway. Spoon onto cakes and spread with a wet palette knife. I made a mistake and added the icing sugar at the beginning - I only boiled it for 2 minutes and it was fine - made crumbly fudge rather than chewy - don't know what the proper recipe is like.
