Anyone making hot cross buns for tomorrow?

If so do you have a favourite recipe. I am doing the River Cottage one which seems very sticky so far. I have always used an old Good Food Magazine recipe before.

 

I am also trying to repeat my success with panatonne. i made a lovely one at Christmas, but up to now this one seems a lot more sticky. I hope it works because we are going away for the weekend and it is supposed to be our main breakfast food. :anxious:

I can't do "sweet" bread mixes...

 

Have no idea why. Normal bread come out fine, but have never managed any dough using milk...

 

So to avoid all disapointment, I don't even bother trying to make them now, and buy them....

I've been making hot cross buns for years now and they usually work out OK. I've made a double batch this year as they go like........hot cakes :lol: . This is the recipe I use

 

1lb strong plain flour

1/2 oz dried yeast

3 oz caster sugar

1 tsp salt

2 tsp mixed spice

2 oz softened butter

3 oz currants/sultanas

1 oz chopped candied peel

1 egg

5 tbsp lukewarm water

1/4 pint lukewarm milk

 

For the crosses:

3 oz plain flour

2-3 tbsp water

 

Sift the dry ingredients and yeast into a bowl. Rub in the butter. Add dried fruit and beat in the egg, milk and water. Knead for 10 minutes. Cover and leave to rise in a warm place for an hour until doubled in size. Shape into 12 buns and leave to rise in a warm place for 30 minutes. Mix together the ingredients for the crosses and pipe onto the buns. Bake in a preheated oven at 190C for 20 minutes. Cool on racks.

Mrs Frugal - what camera setting do you use to make the buns stand out in the foreground and make the background fuzzy ?

 

I have the camera set on automatic but I use manual focus to get one of the buns in sharp focus and this blurs the background. The camera is a Nikon D-40 with a 55-200 lens on and is quite good for playing around with to get the shots I want. I think it's using the longer lens and standing well back from the subject to zoom in on one bun rather than getting in close which fuzzes out the background :lol: .

 

Lesley, thanks :D . The cake stand belonged to my Great Aunt and was given to me when she died and it always comes out at Easter as the plates have pretty spring coloured flowers painted on them.

 

Chickencam - your buns look lovely too :D . I didn't get round to glazing mine. They look so appetising when they're all shiny :drool: !

I managed to get two dozen on the go before going to feed the lambs this morning - I didn't bother with the bread machine as they are quick enough without - and Carl wanted to make today's bread.

 

One dozen with fruit.......

....and another dozen with lots of spice and candied peel.......no fruit......all mine!!

They're a bit pale but we're expecting visitors so I took them out to cool. I like mine soft so I place them close together so that they touch when cooking.

Whats the worse that can hapen...??? :anxious:

 

It is mixing as I type...

 

OH asked what I was making, I refused to say, on the basis if it comes out very wrong I can call it something else and maybe get away with it!

They have just come out the oven

They are BRILLIANT (if I say so myself... :oops: )

 

The first time EVER they haven't turned out like rocks!!

 

They are all fluffy and loveley!!

 

I need to make some more - I might eat these before bed time!! :D:D:D

Since getting my breadmaker for Christmas (thanks mum and dad), I make loads of cakes in it. I find it more reliable than my fan assisted oven, or the more conventional one, with a dodgy seal.... :roll:

So, I am experimenting this year with hot cross bun LOAF! hoping I can slice it and toast it for breakfast on Sunday!

Well mine have just come out of the aga. I was slightly worried because the recipe i used called for a kenwood with dough hook which we don't have so i used my hands instead and they didn't really rise. However they did rise up loads when they were cooked. We have all just had one each and they are yummy! Hmm....we are visiting family on Monday so i'll maybe make some more to take with us and share!

I attempted some on Friday using the Nigella recipe from her feast book, they can go with nochucksyet to the troops, not sure I'd even subject the pigs to them :oops: I didn't hold out much hope when I put them in, the dough seemed all wrong but I'd already added more liquid.
