I stuffed it with Thyme and bay leaves from the garden and chopped up organic lemons, coated it in goose fat, salt and a sprinkling of semolina and slow roasted it for 3 hours - it was moist, juicy and flavoursome We have tons of cold meat in the fridge for sarnies and I am boiling up the carcass with veggies for some soup too - fab!!!! Guest Posted December 25, 2006 Share Posted December 25, 2006 Just found a moment to come on here to say: ABSOLUTELY, TOTALLY FAB! That is the unanimous opinion of all who shared our turkey today. I could tell it was different when I carved it - it was juicy, well-cooked but didn't fall apart. Not in the least bit dry. And people said that they could eat lots of it as it was so delicious. With other turkeys, they felt they couldn't eat any more, whereas this one was so yummy they actually wanted more. How soon can we order for next year? My almond roast was also delicious and the cranberry and orange sauce also went down VERY well. Thank you Lesley for a delectable Christmas dinner! We had turkey as well, cooked by my sister. It was delicious and there was plenty of meat on it - my sister was worrying that it wouldn't be big enough. Thank you for taking the time to come on here and let us know - it is really worrying when you start selling a product which could have many repercussions!!! We cooked a chicken on Christmas Eve and had a few slices each, with the intention of taking the rest to my sister's to supplement the turkey leftovers on Christmas Day - I forgot to take it . We'd already taken another chicken out to defrost for our 'second Christmas Lunch' on Boxing Day...............
