Just made some baked scotch eggs, and have just eaten one for lunch and it was gorgeous I hard boiled and peeled some bantam eggs. Then squeezed out the sausage meat from sausages. I found one large butchers sausage was enough to cover the bantam egg. Then dipped in beaten egg, the rolled in breadcrumbs (I used the rest of a stale loaf of granary I'd made last week). Cooked in the centre of a Pre-heated oven at Gas Mark 5 (so about 180C, don't know about F ) for 30 minutes. I had 9 sausages, so did 9 scotch eggs..... But of course used 10 eggs due to the beaten egg Being baked they are lower in fat than fried scotch eggs, and a great way to use up an egg glut at the moment I can't believe in all the years I've had hens I've never made them before Will definitely make them again if hubby likes them Quote Link to comment Share on other sites More sharing options...

They were lovely Thank you for the recipe Space Chick. I am going to make some more tomorrow evening to take on a picnic on Wednesday. It is the annual cricket match, our village against another neighbouring village DD, baby and I are going to support the village and DD and I often take a picnic. Cinnamon Posted July 11, 2013 Share Posted July 11, 2013 I couldn't wait for the Bantie eggs, so have just made a batch with my smallest hens eggs - they were satisfying to make & taste great. I used plain Walls sausages, as they were on offer, but added tomato ketchup, lots of lea & Perrins & a big handful of fresh thyme to it, so give it some oomph. I think the liquids make the meat a bit easier to wrap around the eggs too. I think I used about a sausage & a third per egg, & baked them for 40 mins in all - I am sure The Husband will like them so I reckon I will be making them again Quote Link to comment Share on other sites More sharing options...
ali-s Posted July 21, 2013 Share Posted July 21, 2013 Made 3 scotch eggs this morning. I used Cumberland sausage and Panko breadcrumbs. Tasted delicious. I think I will use homemade breadcrumbs next time, I used Panko crumbs as they needed using up. All 3 scotch eggs split whilst cooking They had plenty of sausage meat and a good coating of crumbs. A work colleague (who hasn't long started) remarked on what a lovely lunch it looked she was even more impressed when she realised it was leaves from the allotment, and egg from my hens, locally produced free range sausage meat and breadcrumbs from a homemade loaf.... Cinnamon Posted July 27, 2013 Share Posted July 27, 2013 My first lot cracked a bit so when I cooked my second lot today I added a good handful of breadcrumbs to the meat mix too. They are fine.
