I can honestly say it is the most amazing chocolate cake I have ever eaten, and I ALWAYS eat chocolate desserts when out dining, so its a real compliment: nb. Its a HUGE cake, so you could easily halve the recipe. My friend did say it was quite fiddly though with the water, but essential if you don't want just a gloop...and I now know why she kept coming to borrow eggs.....!! The River Cafe Chocolate Nemesis Serves 10 - 12 You need: 675g dark chocolate (70% cocoa) 450g unsalted butter 10 eggs 675g caster sugar Crème fraiche, to serve Method: Preheat oven to 160 degrees C. Line a 27cm spring form pan with foil. Place the chocolate and butter in bowl over a saucepan of simmering water until melted. Remove from the heat and allow to cool. Place eggs and sugar in a large bowl and beat with an electric beater for five minutes until thickened. Fold the cooled chocolate mixture into egg mixture stirring until well combined and reduced in volume. Pour into the prepared pan, then place in a large baking tray and pour boiling water into the tray to come halfway up the sides. Bake in the over for one hour. Turn off the oven and leave to cool completely in the oven. Serve thin slices of the cake with a dollop of crème fraiche. I am planning to make this cake for my dad' birthday today, I am going to halve the quantities, & put it in a 7 or 8 inch tin. how long should I cook it for if the recipe is halved? BeckyBoo Posted November 21, 2007 Share Posted November 21, 2007 I wrote a pretty comprehensive blog when we travelled Australia - DD was 14 months at the time and I was expecting number 2 - we lived in an oldl Toyota Coaster bus, that was a pretty wild experience. I did a blog when we had kids to stay from Belarus, trouble is, although I actually really enjoy writing, I never have the time!!
