Jen&Rog Posted June 30, 2008 Share Posted June 30, 2008 I've got a nice courgette recipe if you like pasta (it's basically one of the dishes at Carluccio's, called the 'Gardiniere'). Just fry up nice thin strips of courgette (I use 1-2 per person) throw in a chopped red chilli and 1-2 crushed cloves of garlic and cook for a few minutes. Lesley Posted June 30, 2008 Author Share Posted June 30, 2008 I picked two tiny yellow courgettes as well I love courgettes. I cook them in a large frying pan. Slice them thinly, put in the frying pan and just cover with boiling water, simmer gently until all the water is driven off. They should be cooked, add a lump of butter and sizzle gently for a few minutes. Add freshly ground black pepper. Yum! Use as any other vegetable. All I got was stung badly by the nettles that have rudely sown themselves in my veg patch while I have been out of action (just had a baby!).
