I don't actually need any more mayonnaise, but Hellman's was always my favourite brand and I've missed it ever since I became aware of the hidden egg. So of course I bought some, and can have my favourite mayonnaise and beetroot sandwiches for my lunch tomorrow . Tried a sainsburys organic one which used free range egg but it wasn't to my taste at all so its still sat in to fridge not being eaten.I may have to go to sainsburys soon to see if my local one stocks it. I never put mustard in my mayo... Here's the way my mum taught me to make it, easy, simple and it works out lovely: You will need: an 'arm' type blender, its usual container, one or two eggs, a lemon, some mild flavoured olive oil, a pinch of salt. Crack an egg or two and pour into the blender container. Add about a cup of mild olive oil (or sunflower oil, but it tastes different). Add a pinch of salt. Add FOUR (and only four!) drops of lemon juice. And the trick is next, in the blending: sink the blender to the bottom and press the button. Keep it very still. The egg mixture will raise slowly to the surface. When the egg bit has surfaced, you can move the blender around, slowly and gently, don't let it trap any air, so that the egg/oil mixture emulsifies. Add a nice squirt of lemon juice and blend a little longer. Taste for salt. And that's it! Remember it has no preservatives so keep refrigerated and use up sooner rather than later. Hen Huggers R Us Posted May 28, 2008 Share Posted May 28, 2008 Thanks for that I'll try it, can't remember where I got the recipe from but I'm sure it said to put a bit of mustard powder in, I didn't have that at the time so put in course ground mustard in white wine vinegar!! no wonder it tasted horrible. Good luck and enjoy OK, I'm sure I'm being stupid here, but what is an 'arm' type blender? I presume this is not one of those electric whisks but is it the blender on a stick kind of thing? I don't have one of those so I guess I'll have to stick with adding the oil drop by drop! Shame, cos this method sounds so much quicker! I use egg yolks only and half olive oil and half light veg oil such as sunflower or rapeseed. I find that 1 yolk will take about 150ml of oil. I do add mustard (half a tsp) and sugar (half a tsp) and vinegar (2 tsp) rather than lemon juice. A tip I got from a recipe book was to add a tablespoon of boiling water to 'set' the mixture, which find converts the mixture from being rather thick and greasy looking to something much more like commercial mayo.
