Half term break I make Christmas cake and puddings. Luvachicken Posted September 12, 2012 Share Posted September 12, 2012 I make it in October 1/2 term too. I make an old M & S recipe from an ancient cookbook of theirs. I adapt it slightly adding dates, apricots and fresh lemon and orange zest, instead of that dried peel. I also cook all the dried fruit with brandy and the juice from the orange and lemon, and then leave it overnight. It smells fab the next morning. For the first time in years I decided to make a Christmas cake, now I remember why I stopped making them; I used Delias recipe but even tho' I wrapped the tin, the outside of the cake is rock hard and the bottom is even worse - and possibly burnt. Will it soften up during storage? And will feeding it loads of brandy help? And if OH says one more time "why didn't you just buy one", I'm going to put it in the dustbin!
