Martin B Posted August 14, 2007 Share Posted August 14, 2007 Hi everybody, thought I'd do a little topic about the result of my cooking night. Well the menu proceeded as: Courgette and Bean soup or Bean Curry followed by Blackberry Pie with homemade custard/icecream. Presentation is also very important, so a nice addition of sweet peas to the table went down well. __________________________________________________ Well the courgette soup was actually a doddle to make, I used a recipe from the River Nene site and I improvised to make it more suitable to accompany my needs. Here is my edited version. Courgette and Bean Soup Serves 1 Ingredients: 100g Beans (A mixture of Runner, Dwarf and Broad approx 33g of each) 100g Chopped Courgette 1 onion 2 tsp of Olive Oil 175ml of Vegetable Stock Mint Basil Method: Preparation Time: 10 minutes Cooking Time: 45 minutes 1. Saute the onion in the olive oil for 10 minutes, but do not colour. Add chopped courgettes and sweat for a further 10 minutes. 2. Cover with the vegetable stock, shell the broad beans, and chop the dwarf and runner beans and add to mixture then simmer until the courgettes are cooked through. Season with salt and pepper. 3. Add a splash of olive oil, lots of chopped mint and basil. Pour the soup into a blender or smoothie maker (in mu case) and "blast" it, until you have a smooth, runny mixture. Because my brother doesn't eat anything I made him a bean curry. Bean Curry Serves 1 Ingredients: 100g of Beans(A mixture of broad, runner and dwarf) 1 medium sized potato 1 small jalapeno Chilli 1 jar of mild curry sauce 100g of rice Method: 1. Shell the broad beans and chop the runner and dwarf beans. 2. Boil the medium sized potato. 3. When the potato is almost boiled, take it out, and put the beans in the samepan and blanch them for 2 minutes. 4. Chop the potato. 5. Put the chopped potato and blanched beans into an empty pan, and put onto a low heat, stir in the curry sauce and add the jalapeno pepper. 6. Stir continuously until the potato and beans are well coated with sauce. 7. Keep the mixture in the pan whilst you boil the rice. 8. When the rice has boiled, sieve the rice and put it into a small bowl. 9. Add the hot curry on top of the rice. 10.Enjoy. _______________________________________________________________ Blackberry Pie Ingredients: 400g of freshly picked Blackberry's Caster Sugar Milk Flour Salt Water Butter Method: 1. First of all you need to make the pastry, choose the bowl or dish you want to make the pie in, so that you know how much pastry to make. First of all make a layer of pastry for the bottom of the bowl. To make pastry put flour, a dash of milk, a pinch of salt and a tsp of water into a bowl. Then add butter and rub the butter into the mixture to make the pastry, 2. Grease your bowl with butter or lard. 3. Then layer the pastry across the bottom of your bowl. 4. Put the blackberrys in a pan and simmer, coat the top of the blackberrys in the pan with a good dosing of sugar, approximately 100g.Preheat the oven to 200degrees. 5. Heat for a couple of minutes until the blackberries are soft. 6. Pour the blackberries into the bowl ontop of the pastery. 7. Make anothe layer of pastry to put on top of the pie. 8. Make a slit in the top of your pie to let the hot air escape. 9. Put the Pie in the oven for 30-40 minutes. 10. Let the pie cool for about 10 minutes. 11. Cut the pie into good portioned slices. 12. Serve with custard or icecream. Custard Ingredients 570ml/1 pint milk 4 eggs, yolks only 30g/1oz caster sugar 2 level tsp cornflour Method 1. Bring the milk, to simmering point slowly over a low heat. 2. Whisk the yolks, sugar and cornflour together in a bowl until well blended. 3. Pour the egg mix into the simmering milk and whisk for 2 minutes constantly. 4. Take the custard off heat and keep stiring until the custard is thick but still runny. Don't worry about lumps! 6. Pour the custard into a jug and serve at once. _______________________________________________________________ Well that's the recipes and everything. It was a real success, the soup was georgeous, Sean enjoyed the curry, and the blackberry pie and custard was 10/10. They've asked me to cook more often, which must be a good thing!
