Where do you keep your eggs?

I did start by keeping them in the fridge but found that my poached eggs started to spread even when the egg was not that old. We only have two hens and OH scoffs most of the eggs so we don't have that many hanging around. I bought one of these http://www.lakeland.co.uk/ceramic-egg-tray/F/keyword/egg/product/12281 from Lakeland and it suits us fine. We know which way round we put them - I admire fellow omleteers who mark their eggs with the date etc but that is not something that I can be bothered to do - we just eat them!

 

Have to say I love the look of the egg skelter though - wish I had known about that!

goodness i wish my girls would hurry up and lay I think they are too young still) my lovely cream egg skelter is graced with the lovely free range eggs, that a boy on a local farm has started selling...

 

darn remembered I have loads of washing up to do, and the dishwasher to empty too....double drat :-(

Egg skelter here too...but some eggs have to be helped to roll down as Becky the Specky lays very small round eggs that want to turn sideways in the skelter and then get stuck.

I used to have this problem but now Ebony's eggs get stuck as they are too big and get jammed half way down where there is a support for the top layer, but I'm not complaining, I love the egg skelter and Ebony's eggs are lovely almost all over 70g.

I have a terracotta egg tray much like the Lakeland one. I write the date on in pencil so I know which are the lovely fresh ones for poaching, the older ones for boiling and the oldest for baking in cakes.

 

Is there a list somewhere of what age of eggs is best for what use? I'm particularly interested in which to scramble or fry. Thanks!
