i was given chickens for my birthday

because i am the worlds biggest fan of eggs. i would eat them all day if i had enough. and so my hubby got me some hens for my birthday, he set up the whole pen while i was away for the weekend with the girls at a spa. cheeky thing. i am told that they are hens specifically for those who have chickens for eggs, in that they are already happy egg laying hens when you buy them.

i havent yet seen an egg though. could this just be them getting used to their environment? i have only had them for 10 days or so...

haha and of course, my daughter has just come running up the garden with an egg! she nearly cried!! bless her. i have now just sent her back down the garden with the camera- dont you love half term!

i believe we have 3 rosecombs and 2 marsh daisys although i have been looking into it and im not entirely sure that one of them isnt a dorking. although we were told rosecombs and marsh daisys and i am no pro so i am inclined to believe the vendor. we have of course (as a family) named them: dave (my son refused that they were all girls), tilly, miranda, loops and chichi.they really do have such sweet natures and the kids have such fun just being around them.

i have never cooked fresh eggs though and i have always used a little egg boiler contraption http://www.twenga.co.uk/dir-Appliances,Breakfast-appliances,Egg-boiler to cook them. are there any differences with super fresh eggs? i have heard that they poach well but that is a lesson i need to learn!

Ah that is sooo nice of your Oh, that's what you call a really thoughtful birthday present....I bet you were so excited !

 

I laughed when I read your next post about the egg :D I bet the kids were extatic...I would be!

 

I got mine a week ago today and am running out to look for eggs every morning!

 

Wait til you bake your first cake with them, the colour of the yolk is amazing and makes cakes taste and look so much better.

 

Put a pic on of your egg...I'm dying to see it ...please ha ha

I love the taste of a really fresh boiled egg, and if I am having boiled eggs I will walk up to the barns to find a fresh laid one(or two).

 

The whites are much more tender, and a fresh egg takes a little longer to boil. Experiment a bit, but I find bring the water to the boil and gently lower the eggs in with a teaspoon. Don't try to boil eggs that have been in the fridge or are very cold as they will crack when the meet the boiling water

 

Allow the water to come back to the boil then time them. My eggs are very large and I boil for 4 minutes, if they were smaller I would go for 3 or even 2.5 mins.

 

To poach eggs bring water in saucepan to boil, take off heat add eggs gently, you can crack them into a saucer first if it helps. Just keep the water hot but not boiling till they look cooked probably around 2 mins. Using a draining spoon gently lift them out in the order you put them in, blotting them on a kitchen towel to remove excess water

 

Poached eggs on lovely buttered toast, or with home made oven chips......delish!!!!
