They also sent up a few trugs of redcurrants, so those are in the freezer as I have run out of jars for now! For supper we have: Sweetcorn & red onion fritters (onion & coriander from garden) With a sweet chilli sauce (Chilli from the greenhouse) Fresh potato salad (Pots & spring onions from garden) and chopped salad (Q,Toms,Spring onions from garden) and crispy freerange bacon.................shame we don't have room for pigs! Okay - 10 jars of apple and blackberry jam Some spaghetti - I'm honestly not sure that there is enough for dinner for all of us tonight. Not sure its worth pfaffing around making it. I had some courgettes I had grown (they were huge) so now I have found a nice way to eat them . The recipe is from this months good food magazine. chickencam Posted August 12, 2010 Share Posted August 12, 2010 Roasted tomato sauce for freezing for use with pasta in the winter. I roast tomatoes cut side up with a little olive oil, then when they are starting to char a little, I puree them with fresh basil leaves and sometimes put some garlic in for a few minutes at the end of raosting, then blitz that with it. It makes a very tasty sauce and is dead easy. I roast them for different lengths of time some for longer which get used as tomato puree on pizzas etc and some for less which makes a more liquid sauce. I have some more in the oven now and a separate tray with courgettes and onion in which I will mix with the puree to go with ravioli tonight. Ingredients: - 250 g unsalted butter very soft plus some for the tins - 3 unwaxed lemons - 200g golden caster sugar - 3 eggs - 2 medium courgettes (300g flesh) -1 tsp poppy seeds plus decoration - 1 tsp vanilla extract - 100g self raising + 100g wholemeal plain flower - 1tsp baking powder - 85g icing sugar - 200g full fat soft cheese - 4 tbsp lemon curd 1 heat oven to 180C Butter 2 x 20cm cake tins and line bases with baking paper Zest 2 lemons, squeeze juice into a separate bowl Put 200g butter, caster sugar, eggs, courgettes, poppy seeds, vanilla and lemon zest in a mixing bowl. Beat to a creamy batter, stir in 1 tbsp lemon juice, flours, baking powder and 1/4 tsp salt. Spoon mix into the tins and bake for 25 mins until springy and golden 2 make a drizzle - mix 1 tbsp lemon juice with 25g icing sugar. Put remaining icing sugar and butter into a bowl, add soft cheese and remaining lemon juice. Grate in the final lemons zest. Beat to make a smooth creamy frosting. 3 When the cakes are ready, cool in tins for 15 mins, turn onto cooling rack. Prick several times with a cocktail stick spoon over the drizzle and cool completely. Put one cake onto a serving plate, spread with just under half of frosting Spread over lemon curd Top with the second sponge and spread over the remaining frosting, decorate with poppy seeds This cake is really really nice Quote Link to comment Share on other sites More sharing options...
