What have you cooked today?

I made this cake a couple of days ago. It does go into two layers, but is really quite eggy I wonder if I can use an egg less? I am thinking of trying it with lemon rind and see if that cuts through the eggy taste.

 

I like the look of the chocolate version! I wonder if it could be made with gluten free flour?

 

To answer my own question - yes it can, and very nice it is too.

Today I've made Vanilla Macaroons with a Salted Caramel filling :drool:

I bet there's none left! Sounds wonderful! What is the recipe please? I keep intending to make macaroons but I haven't got round to it yet!

 

I casseroled some pork cheeks and made barbecue ribs whilst the oven was on. Both were very tasty. Had the ribs on Saturday and the pork cheeks tonight.

The best tutorial I've seen on making macaroons is from Ruth Clemens (GBBO) - http://www.thepinkwhisk.co.uk/

and the salted caramel sauce was the Nigella recipe, you just need to use less cream to use it as a filling rahter than a sauce - very quick and easy..... I'd made macaroons many times and not had a problem, having read about Ruth's problems I realise I must have been lucky.

 

....and, you're quite right....there are none left :D

Hot Cross Buns! And they were lovely, I'll have to make some more tomorrow :lol: .

 

Same here! I did Paul Hollywoods ones but tweaked them a bit. I added almost 2 tsps of mixed spice instead of one of cinnamon, and I baked the for 15 min instead of the 20 odd mins he says - mine were slightly too dark! I would leave out the apple next time too. Apart from that, they are yum! Rose beautifully and are ally soft.

I added almost 2 tsps of mixed spice instead of one of cinnamon, and I baked the for 15 min instead of the 20 odd mins he says - mine were slightly too dark! I would leave out the apple next time too. Apart from that, they are yum! Rose beautifully and are ally soft.

 

Oh ....bother! I just decided at the last minute to add the apple to see what it was like! I'll know in an hour or so then.

I also added much more spice - 1 tsp cinnamon and 2 tsp mixed spice......and more milk than he said - I'll keep an eye on the cooking time. Half of mine have dried fruit :vom: - the other half have chopped, dried apricots 8) - His and Hers :lol:

Mini meringues for mini passion fruit Pavlovian for tomorrows easter feast ( or raspberry if the passion fruits don't ripen in time - any ideas on how to end that process up?) an am about to make a hot cross bun and butter pudding for same meal.

 

Plus dyed some boiled eggs - not really baking or cooking as such but they do look quite pretty :D Shame once I washed the food colour off the colour that took was much paler. Wish I knew how to make them a deeper colour.

Magic Meringues! - they were the recipe today on the Pink Whisk and took me back to when I bought my first microwave about 30 years ago (!!), they were the first thing I cooked in it! I'd forgotten all about them.

 

They are a different texture to normal meringues but they're great for using in Eton Mess.
